Grit
Water stones are used with water. The grit number shows how coarse the stone is: a 200 grit stone is coarser than a 2000 grit stone. Coarse stones repair a dull or damaged edge, fine stones refine and polish. With the right combination you get a razor-sharp edge.
Naniwa and King
Naniwa was founded with the aim of making stones that remove steel efficiently, and its stones are of consistently high quality. King stones are made by Matsunaga and feel slightly softer in use.
Flattening the stone
A water stone dishes with use and needs flattening to stay true. A coarse diamond plate is ideal for this, and if it is used only for flattening it will last a very long time.
